Here are a few quick recipes… Chicken pot pie (my Mother In Law gave me this one and the kids love it) 2 can of mixed vegetables, 2-3 chicken breasts, 1-2 cans of cream of chicken soup, pie shell (I used the Pillsbury pre-made in a box).
Boil the chicken breast on med high heat for about 45 mins. Lightly grease a pan and place the first pie shell in the bottom. Cut the boiled chicken into small piece and place in a mixing bowl. Add the mixed vegetables (drained) and cream of chicken (I use one can but if you want it a little more saucy, use 2 cans). Mix together and put in pan. Then put other pie shell on top. Place in oven on 350 for 45mins-1 hour. Spinach Casserole Linguine noodles, 1 bag fresh spinach, clam sauce, butter, shred cheese (1-2 cups), meat (we usually do shrimp-crab meat-scallops, but can also be done with cut up chicken breast). Cook the linguine noodles. Then place in a mixing bowl. Use about 1/4 cup butter and mix with the noodles. Add the spinach, cheese, meat, and clam sauce. Mix it all together and place is baking dish. Sprinkle some more cheese over the top. Place in oven on 350 for about 30 mins. Seven Layer Casserole Cabbage, hamburger meat (2 lbs), potatoes (6 large), mushrooms, carrots, onion, green peppers. Cut up onion and green peppers into small pieces. Brown hamburger meat, onion, and green peppers all together. In a large roasting pan lay down a layer of cabbage leaves. On top of the cabbage leaves put a layer of cut up potatoes. Pour about 1/2 cup of water over the top of the potatoes. Put half of the hamburger mix on top of the potatoes. Place another layer of cabbage leaves. Do a layer of carrots and place the rest of the hamburger mix on top. Do a layer of mushrooms and then cover with a thin layer of shredded cabbage leaves. Put in the oven on 350 for about 1-1.5 hours. I think I will try to include a couple of recipes in the blog at least once a month. I love to cook and the kids are getting to the point where I can actually have the time to do that again… so I am excited!
